مراقبة سويّات هيدروكسي ميتيل فورفورال في العسل المتوفّر في محافظة اللّاذقية

Abstract

يهدف هذا البحث إلى مراقبة جودة العسل المتوفّر محلّياً بالتحليل الكيفي والكمّي لمركب 5- هيدروكسي ميتيل فورفورال 5- hydroxymethylfurfural(HMF) و التحقّق من مطابقة العسل المحليّ للمواصفة القياسية السورية. تمّ تحليل العينات المدروسة باستخدام طريقة وايت White’s method التي تعتمد على القياس بمجال الأشعة فوق البنفسجية UV عند طولي موجة (284 nm, 336 nm) باستخدام مقياس الطيف الضوئي spectrophotometer، ثم تمت مقارنة النتائج مع المواصفة القياسية السورية رقم/412/ لعام /2004/. تم في هذه الدراسة اختبار خمسين عينة عسل متوفرة في السوق المحلية لمدينة اللاذقية حيث أظهرت نتائج هذه الدراسة بأن سبع عينات مخالفة للمواصفة القياسية السورية بينما كان تركيز المركب في ثلاث وأربعين عيّنة ضمن المجال المسموح به. This aim of this study was to control the quality of honey locally available by qualitative and quantitative analysis of 5-hydroxymethylfurfural compound (HMF) in order to verify the conformity of local honey Syrian standard specification. The samples were tested by using White’s method depending on the measurement using spectophotometer at (284 nm, 336 nm).In comperation with the standard Syrian specifications number /412/ (2004), there were fifty test samples collected from locally available, results showed that there were seven samples do not match the Syrian standards, and forty three samples were accepted.
