أهم المكونات الكيميائية لبذور صنفين من أصناف العنب السوري وبعض مواصفات الزيت المستخرج منها
Abstract
هدف هذا البحث إلى دراسة بذور صنفين من أصناف العنب السوري، من حيث التركيب الكيميائي، ومن حيث خواص الزيت المستخلص منها، ومدى إمكانية استخدام هذا الزيت في الصناعات الغذائية .
أظهرت النتائج أن بذور صنفي العنب المدروس تحتوي على الألياف الغذائية (38.82 ـ 43.06%)، والزيت (13.97 ـ 15.97%)، والكربوهيدرات (15.55 ـ 15.66%)، والبروتين (13.52 ـ 16.1%)، ويتميز زيت بذور العنب باحتوائه على نسبة قليلة من الأحماض الدهنية الحرة (0.46%) ورقم حموضة
(0.92 مغ ماءات بوتاسيوم/غ)، كما يتميز بارتفاع الرقم اليودي (128-129.2 غ يود/100 غ )مما يؤكد الطبيعة غير المشبعة لهذا الزيت، ويتميز أيضاً بانخفاض كبير في رقم البيروكسيد (5.49) مقارنةً بباقي الزيوت.
يحتوي الزيت على حوالي(7-11) حامضاً دهنياً مشبعاً وغير مشبع، ويعتبر حامض البالمتيك
(11.96-11.91 %)الحامض الرئيسي المشبع، أما الحامض الدهني الأساسي غير المشبع فهو حامض اللينولييك بمتوسط (66.64 – 68.31 %). ويتميز زيت بذور العنب بارتفاع الأحماض الدهنية غير المشبعة
(83.49 –84.26 %)مما يكسبه مميزات غذائية ممتازة ويجعله مفيداً في التطبيقات الغذائية المختلفة.
This paper aimes at studying the grape (Vitis vinifera) seeds of two Syrian cultivars for chemical composition and oil characteristics, and the possibility of using this oil for human consumption. Grape seeds prove a good source of dietary fiber (38.82–43.66%), oil (13.97–15.97%), carbohydrate (15.55–15.66%) and protein (13.52–16.1). They contain a low amount of free fatty acids (0.46%) and acid value (0.92 mg KOH/g). The high iodine value obtained in our study confirms the unsaturated nature of these oils. Also, they possess a very low peroxide value in comparison with others. Grape seed oils contain (7–11) fatty acids; palmetic acid (11.91–11.69%) is the main saturated fatty acid, while the main unsaturated is lenoleic acid (66.64–68.31%). The grape oil obtained shows a high level of unsaturated fatly acid (83.49–84.26%), which gives it excellent dietetic properties.
