دراسة كيميائية لزيت بذور التفاح (غولدن ديليشس)
Abstract
يهدف البحث إلى دراسة زيت بذور التفاح من الوجهة الكيميائية لمعرفة تركيب الزيت من الأحماض الدهنية المختلفة، والتعرف على مواصفات الزيت الفيزوكيميائية.
أثبتت النتائج أن بذور التفاح تحتوي على نسبة مرتفعة من الزيت 26.72%، كما يتميز هذا الزيت باحتوائه على نسبة منخفضة من الأحماض الدهنية الحرة (1.85%)، ورقم حموضة (3.69 مغ KOH/غ)، ورقم بيروكسيد (2.19 ميللمكافئ/كغ)، ورقم تصبن (164.9 مغ KOH/غ)، ورقم يودي (95 غ/100غ)، ويحتوي زيت بذور التفاح على (12) حامضاً دهنياً، وكان حامض الستياريكC16:0) ) هو الحامض الدهني الرئيسي المشبع بنسبة (36.33%)، بينما كان الحامض الدهني الرئيسي غير المشبع هو الأولييك بنسبة (51.73%)، وأظهرت النتائج أيضاً أن نسبة الأحماض الدهنية المشبعة قد بلغت (45.25%)، أما تلك الأحماض غير المشبعة فقد وصلت إلى حدود (54.75%).
This research aims at studying the apple seed oil for their fatty acids composition and physicochemical characteristics of oil.
The data indicated that apple seeds contained high amount of oil (26.72%), low percentages of free fatty acids (1.85%), with acid value (3.69 mgKOH/g), peroxide value (2.19 m.eq O2/kg), saponification (164.9 mg KoH/g) and iodine number (95 g/100g). Also, apple seed oil contained (12) fatty acids. Stearic acid (C16:0) was the main saturated fatty acid (36.33%), while the main unsaturated was oleic acid (51.73%). The data also showed that saturated fatty acids reached (45.25%), while, the unsaturated reached (54.75%).
