دراسة التلوث الجرثومي لبيض المائدة المعروض للاستهلاك البشري في الأسواق التجارية لمحافظتي طرطوس واللاذقية
Abstract
تم التحري عن مدى تلوث البيض خارجياً وداخلياً باعتماد طرائق الزرع والعزل الجرثومي. وأظهرت نتائج دراسة 540 عينة بيض من المحال التجارية المختلفة لمحافظتي طرطوس واللاذقية تلوثاً جرثومياً على القشرة الخارجية لجميع عينات البيض المدروسة، وكانت نسبة التلوث الأعلى بالجراثيم الهوائية وخاصة المكورات العقدية والتي بلغت 87,03%، تلتها المكورات العنقودية بنسبة 77,4%. أما الجراثيم المعوية فقد بلغت نسبة التلوث بالسلمونيلة 16,11%، والعصيات القولونية 17,77%، وبلغت نسبة التلوث بالمكورات البرازية 1,66% وبعصيات إيجابية غير مصنفة 1,85%. ويجب التنبيه إلى مدى خطورة التلوث الداخلي للبيض والذي يمكن أن يشكل تهديداً صحياً حقيقياً على جمهور المستهلكين.
External and internal Table Egg bacterial contamination was investigated. Results of 540 of layout Table Egg in Tartous and Latakia commercial markets samples showed that, the all tested Egg shell samples were bacterial contaminated. The highest casualty percentage amounts 87,03% for Streptococcus, then 77,4% for Staphylococcus. For the Enterobacteriaceae it was proportion of Salmonella contamination 16,11%, Bacilli coli. 17,77%, Fecal Coccus 1,66% and no classified gram positive bacillus 1,85%. The monition must be taken to serious degree of table egg internal contamination. It may be actual hygiene threat on consumptive people.
