مراقبة حمض البنزوئيك وأملاحه في بعض أغذية الأطفال (رقائق البطاطا) المتواجدة في السوق المحلية
Abstract
يستخدم حمض البنزوئيك وأملاحه بشكل واسع في الصناعات الغذائية كمادة حافظة لجودة الأغذية وإطالة صلاحيتها فهي تمنع نمو الفطور والبكتيريا، وأظهرت العديد من الدراسات السابقة أن استهلاك هذه المركبات بكميات زائدة يسبب العديد من المخاطر الصحية. تهدف هذه الدراسة إلى الكشف عن وجود حمض البنزوئيك وأملاحه في بعض المنتجات الغذائية المخصصة للأطفال والمتواجدة في السوق المحلية كرقائق البطاطا(Potatochips) والتي كتب على غلافها الخارجي "خالية من المواد الحافظة"، فتم تحليل27عينة من رقائق البطاطا موزعة على ثلاث شركات مختلفة بهدف الكشف عن وجود حمض البنزوئيك، وأظهرت النتائج وجود حمض البنزوئيك في9عينات منها وتراوحت تراكيزه في هذه العينات بين100.34-188.65 مغ/كغ باستخدام الطريقة الطيفية، كما ويمكن اعتبار تقانة الفصل باستخدام الطبقة الرقيقة هي الطريقة الأكثر ملاءمة للكشف عن حمض البنزوئيك في المنتجات الغذائية. Benzoic acid is extensively used in the preservation of food products for maintaining quality and extending shelf life by inhibiting mould and bacteria growth. Some previous studies have demonstrated that consumption of excessive amounts of benzoic acid could be a health hazard. The aim of this study was to detect the presence of benzoic acid and its salts in some commercial children food like potatochips that labeled "Free of Preservatives" . Twenty seven samples of potatochips purchased from three different local products were analyzed for the presence of benzoic acid. The results revealed the presence of benzoic acid in nine samples and its concentration was between 100.34-188.65mg/kg. We have concluded also that TLC is a very convenient method for the detection of benzoic acid in food products .Downloads
