مقارنة بعض مواصفات زيت الزيتون المستخلص بطرائق مختلفة في محافظة اللاذقية ومطابقتها مع المواصفات القياسية السورية
Abstract
This study aimed to compare some properties of olive oil and conformity them with Syrian standards for samples extracted using different methods (cold pressing, centrifugation, and khreeg) collected from distributed areas along the province of Lattakia / Syria including (Jableh, Qurdaha, Kanjra and Mashqita), The samples were collected over four consecutive days (11,12,13,14) November 2015, kept in the refrigerator until the time of the analysis, and the studied properties were determined using reference analysis methods.
The results showed no significant difference in the free acidity and peroxide value between the samples extracted using cold pressing and those using centrifugation and all samples were in accordance with Syrian standards, while the khreeg oil samples showed a clear increase in these values, and two of them were outside the Syrian standards. As for the composition of fatty acids, all samples were in accordance with Syrian standards. There was no significant difference between the samples in the fatty acid content except palmitic acid, where the khreeg samples showed a clear increase in palmitic content compared to samples extracted using centrifugation.
هدفت هذه الدراسة إلى مقارنة بعض مواصفات زيت الزيتون ومطابقتها مع المواصفات القياسية السورية, وذلك لعينات مستخلصة بطرائق مختلفة ( الضغط على البارد, الطرد المركزي, الخريج ), جُمعت العينات من مناطق متوزعة على امتداد محافظة اللاذقية / سوريا تضمنت (جبلة, القرداحه, القنجرة, مشقيتا)، تم جمعها خلال أربعة أيام متتالية
( 14,13,12,11) تشرين الثاني2015, وحفظت في البراد حتى وقت إجراء التحاليل، وتم تحديد المواصفات المدروسة باتباع طرائق التحليل المرجعية.
أظهرت النتائج عدم وجود فرق معنوي في النسبة المئوية للحموضة الحرة وقرينة البيروكسيد بين العينات المستخلصة بالضغط على البارد وتلك المستخلصة بالطرد المركزي وكانت جميع العينات مطابقة للمواصفات القياسية السورية. بينما أظهرت عينات زيت الخريج ارتفاعاً واضحاً في هذه القيم وكانت عينتان منها خارج المواصفات القياسية السورية. أما بالنسبة لتركيب الأحماض الدسمة فكانت جميع العينات مطابقة للمواصفات القياسية السورية و لم يكن هناك فرق معنوي بين العينات في نسب الأحماض الدسمة باستثناء حمض البالميتيك حيث أظهرت عينات الخريج ارتفاعاً واضحاً في نسبته مقارنة بعينات الطرد المركزي.
